The Quote/Background: This also the 40th anniversary of Marques de Casa Concha. Marcelo, who comes to Toronto about once a year, spoke on the changing nature of Concha y Toro as they position themselves internationally. They are developing more food friendly wines in an elegant, sophisticated style, wines that are also suitable for sipping on their own but appear to be better with food.

* FOOD BOOK OF THE MONTH! : Chile Pepper Bible (R Rose)

THE CHILE PEPPER BIBLE (Robert Rose, 2016, 448 pages, ISBN 978-0-7788-0550-2, $29.95 CAD paperbound) is by Judith Finlayson, longtime food journalist and cookbook author. Her book covers every aspect of chile peppers, including history, cultural features, and international signature dishes. "Chile" refers to capsicums in general, whether they are hot or not: the concentration of capsaicin depends on a wide range of variables and are covered with Scoville units. She's got 250 recipes covering  an international range of classics, and from sweet peppers to fiery and stuff in between. Richly illustrated with compelling photos. Preps come from Mexico, Middle East, China, and Thailand for the most part, although Italy, France, Spain, Africa, India also get their due. Preparations have their ingredients listed in both metric and avoirdupois measurements.
Audience and level of use: Indonesian fried rice, Castilian garlic soup, paella, Cuban hash, Cape Verde sausage stew, kimchi, chile chocolate pots, spinach and tomato dal.
The downside to this book: nothing much really, but I hope that the paperbound book stands up to the wear and tear that it will see.
The upside to this book: the index entries are coded for G (gluten-free), V (vegetarian), and Vg (vegan).
Quality/Price Rating: 89.

* DRINK BOOK OF THE MONTH! *

1.SHRUBS (The Countryman Press, 2016, 255 pages, ISBN 978-1-58157-388-6, $24.95 USD hardbound) is by Michael Dietsch who has also written Whiskey. He is bringing back an old-fashioned drink for newer times. Shrub in North America is a drink from the 13 Colonies, a concentrated syrup made from fruit, vinegar, and sugar that is later mixed with water to make a refreshing drink that is both tart and sweet. Later, brandy or rum was added. Earlier in England the shrub was made from alcohol, sugar and fruit, with no vinegar. So that is the basic difference between US and English shrubs. Dietsch has re-created the shrub, favouring the cold process of extracting fruit flavours as that concentrates the fresh raw flavours of the fruit. There is an easy technique that he gives, and so you'll just need to substitute fruits and vinegars to create your own. He's got 50 shrub recipes plus 30 cocktails. But of course you can take a non-alcoholic shrub and just add brandy or rum. He's got some classic shrubs attributed to Benjamin Franklin and Martha Washington, but the rest of the book is divided as to "sweet shrubs", "savoury and sour shrubs", "cocktails" and updated classics (gimlet, martini, kir, sangrita). Preparations have their ingredients listed in avoirdupois measurements, but there is no table of metric equivalents.
Audience and level of use: cocktail lovers, those craving non-alcoholic refreshing drinks.
Some interesting or unusual recipes/facts: rhubarb shrub, strawberry-peppercorn shrub, pear-ginger shrub,cherry-mint shrub, cranberry-apple shrub, red beet and peppercorn shrub, shrub float, gin genie.
The downside to this book: I wanted more history.
The upside to this book: He profiles three shrub makers, and includes a resource list.
Quality/Price Rating: 90.

So many people have asked me for wine recommendations, with numbers only. The readers' most common response is that while they like what I say, they only relate to the score. The score is a combination of MVC (Modal Varietal Character, where e.g. a Southern Rhone tastes like a Southern Rhone and not like a Northern Rhone) and Quality/Price Ratio. Let's take it for granted that, e.g., a Riesling tastes like a Riesling, and the wine has some value in the marketplace either above or below its selling price. This way too I can also cover more wines.

The Event: SwirlTO trade show, “an elevated beverage experience” highlighting Drinks Ontario premium drinks.

The Event: SwirlTO trade show, "an elevated beverage experience" highlighting Drinks Ontario premium drinks.
The Venue: The Carlu
The Target Audience: in the daytime, media and the trade. At night, consumers.
The Availability/Catalogue: The catalogue presentation was reasonable. Vintage dates were missing from a variety of wines, but they were mostly there. I could not read the number of the table (it was in faint yellow in the catalogue), but that did not really matter since the tables themselves were not numbered. The catalogue gave me the importer's name and deets. The wines came from the General List, Vintages (current and upcoming), and consignment. Everything appeared to be landed in Ontario as of this moment. Some Ontario wines were included because they were part of a Drinks Ontario member's portfolio. Eighty or so agencies poured more than 320 products.
The Quote/Background: SwirlTo has been in the planning for three years, co-chaired by Camille Gemmell-Johnston and Debbie Shing. It's been sponsored by Drinks Ontario with the co-operation of the LCBO – as a showcase of quality products for all kinds of wines, beers and spirits. It is unique in the sense that it is comprehensive (not one country, not one beverage, but all of them). Principals were in attendance, as well as seminars on wines, beers and spirits (for the consumer portion at night).
The Wines: I concentrated on wines. Of everything else, I sampled only draught beer.
Leading the way was top rated Nickel Brook Brewing with their Equilibrium ESB (5.5%ABV), Head Stock IPA (7%ABV), Naughty Neighbour APA (4.9%ABV), and Cause & Effect Blonde Ale (4.7%ABV) – all rated "Four Stars". Also tasted in draught were Collective Arts Gose and Beau's Polaris (5.9%ABV). The Growler program at the Scrivener Square LCBO sells about 150 growlers a week for three kinds of draughts. That's an average of 50 growlers per tap.

The Food: catered by Oliver & Bonacini, with great looking Yorkshire pudding beef boats, crudites, international cheeses, dips, breads, crackers, small plated salmon, four kinds of sliders (lamb, pork belly, beef, chicken), samosas.
The Downside: to me, "premium wines" mean about $25 and up – there were too many wines under $20. Also, it was very dark and hard to note vintages and write it up.
The Upside: there were separate areas for Canadian whisky, growlers, and beers. And it was a great chance to see The Carlu again.

The Quote/Background: The catalogue was outstanding, with label reproductions, vintage dates, grape varieties, prices and spaces for tasting notes. It was also fat and heavy.

The Downside: there were a lot of wines to absorb, so I did not taste everything. And it is too bad this portfolio tasting is only every two years.
The Upside: a chance at some really expensive wines, one of the best portfolio tastings all year, with a high level of consistency.

The Event: “Spain is Wine” trade show and consumer show at the AGO

The Date and Time: Monday, September 19, 2016    12:30 PM to 2PM
The Event: "Spain is Wine" trade show and consumer show
The Venue: AGO
The Target Audience: in the early afternoon, it was media, followed by the trade and then the consumers.
The Availability/Catalogue: there were a fair number of wines, 275 in all, but not all are available in Ontario. Some wineries were actively seeking agents. The catalogue was excellent in its construction, spiral bound, holdable with one hand, and full of relevant information about the wines.
The Quote/Background: It was a well-attended show, marred somewhat by non-media attending – and slowing down – the 12:30 – 2 PM portion.
The Wines: Of course, I could not taste all the wines, so I eliminated (reluctantly) all the fortifieds, the spirits, and the wines not available in the province – since I usually write about wines that people can buy now or at least soonish. That brought me down to the following red wines and cavas –

The Food: the emphasis was, of course, on Spanish-style food. We had wonderfully salty croquettes de jambon serrano, dates stuffed with mahon cheese wrapped with Iberico pancetta; albondigas with almond sauce; patatas bravas with roasted tomato aioli; pan con tomato with serrano ham; marinated octopus in Spanish olive oil with sherry vinegar and smoked paprika; and murcia al vino with quince. Cheeses were also featured separately: murcia al vino, valdeon (blue); manchego 3 months; and mahon.
The Downside: There were no wines from Ribera del Duero...why???
The Upside: it was the first general Spanish wine trade show is years, since June 17, 2008 at Hart House.

The Event: the Annual (14th) Sparkling Wine tasting by the Wine Writers' Circle of Canada.
The Venue: WWCC Clubhouse
The Target Audience: members of the WWCC
The Availability/Catalogue: all of the 50+ wines are available in Ontario through the usual distribution channels, including "consignment" or "Ontario winery only". The intent is to showcase to our members what wines would be avaialble for the upcoming Holiday seasons.
The Quote/Background: The WWCC has been holding this tasting every fall in order to give its members a chance to taste what is in the marketplace for the upcoming Holiday Seasons (Thanksgiving through New Years and St. Valentines Day). About a dozen writers turn up over the course of a day. We the WWCC would like to thank our industry partners for the opportunity to sample these wines.
The Wines: Although ciders were also requested, we only received one:     Thornbury Apple Cider $3 +333583 5.30% ABV, which was tasted at the end and rated by me at a good Four Stars (91 points), and highly recommended. What follows are grape-based wines; the ratings are MINE ALONE and not the group's. Each writer rates or writes separately, and there is no cumulative total or average rating.

The Availability/Catalogue: wines are in Ontario via agents or LCBO.
The Quote/Background: Garnacha (Grenache in France) comes in red and white. There is a garnacha blanca that is either light or full-bodied. There is a garnacha that is made into rose. Red garnacha can be fresh or it can be robust. It is mostly grown in Carinena, Terra Alta and Campo de Borja, with smaller amounts in Calatayud and Somontano. Total plantings worldwide are about equal to syrah/shiraz.
The Wines: I tasted 10 wines and added one more that I had recently sampled.

So many people have asked me for wine recommendations, with numbers only. The readers' most common response is that while they like what I say, they only relate to the score. The score is a combination of MVC (Modal Varietal Character, where e.g. a Southern Rhone tastes like a Southern Rhone and not like a Northern Rhone) and Quality/Price Ratio. Let's take it for granted that, e.g., a Riesling tastes like a Riesling, and the wine has some value in the marketplace either above or below its selling price. This way too I can also cover more wines.

MORE INTERESTING FOOD AND DRINK BOOKS for this month.

3.HOW TO MAKE SOURDOUGH (Ryland Peters & Small, 2016, 160 pages, ISBN 978-1-84975-704-1, $24.95 USD hardbound) is by renowned baker Emmanuel Hadjiandreou who had worked with Gordon Ramsay and organic food shops. His bread creations have won him several awards such as the Soil Association Organic Food Award for his sourdough. This is his third book, and of course it covers natural bread making. The primer details the sourdough process, and then it is on to the pre-ferment or biga. He's got 45 recipes, divided into types of grains; the same grain is used in the starter. There are chapters on rye sourdoughs, gluten-free sourdoughs, spelt sourdoughs, and some specialty ones. The hardest part of the whole procedure is getting the sourdough to do an initial ferment; the rest is basic breadmeaking of kneading, shaping and baking. There are plenty of technique photos. Preparations have their ingredients listed in avoirdupois measurements, but there is no table of metric equivalents. And of course, everything is scaled – as it should be.
Audience and level of use: bakers looking for new ideas, sourdough lovers.
Some interesting or unusual recipes/facts: prune and pepper rye sourdough; sprouted spelflour sourdough; red quinoa sourdough; chickpea and potato focaccia.
The downside to this book: I wanted more recipes!
The upside to this book: preps for rye and spelt and GF.

4.CRISPS, COBBLERS, CUSTARDS & CREAMS (Houghton Mifflin Harcourt, 2016, 302 pages, ISBN 978-0-544-23075-0, $30 USD hardcovers) is by Jean Anderson, who has written a score of cookbooks over the years, including The food of Portugal and The Doubleday Cookbook. She's been a multiple Beard Award winner and a senior editor at Ladies' Home Journal. Here she visits a love of custards, et al: 150 recipes divided equally. These are what the Brits call "puddings", the real goods. An excellent resource tool, with many variations and some gluten-free alternatives. Preparations have their ingredients listed in avoirdupois measurements, but there is no table of metric equivalents.
Audience and level of use: comfort food lovers, home cooks, dessert lovers.
Some interesting or unusual recipes/facts: heirloom betties, crisps, baked custards, stovetop creams, dulce de leche, souffles, bread puddings, Bavarians, Charlottes, whips, moulds, mousses, sauces, toppings, puddings.
Quality/Price Rating: 88.
 
 
5.ONE PAN TO RULE THEM ALL (Good Books, 2016, 265 pages, ISBN 978-1-68099-130-7, $19.99 USD hardbound) is by Howie Southworth and Greg Matza. The two guys live and die by their iron skillets, and this book gives us 100 cast-iron skillet recipes for indoors and out (grill and campfire). It's a guy book, so men can extend their repertoire from the BBQ to the camp and to the home kitchen. No excuses. For the mechanic in the family, there is a thorough section on buying, seasoning, cleaning, repairing, and general care – all once you've kicked the tires. Preparations have their ingredients listed in avoirdupois measurements, but there are tables of metric equivalents.
Audience and level of use: guys.
Some interesting or unusual recipes/facts: chopped pork and red slaw sandwiches; mega-tamales; Creole jambalaya; baked ziti; campfire burritos.
The downside to this book: actually needs more pix of skillets.
The upside to this book: good large print, and an even larger-sized index!

6.BREAKFAST LOVE (Quadrille Publishing, 2016, 192 pages, ISBN 978-1-84949-714-5, $22.95 USD hardbound) is by David Bez, who, four years ago, challenged himself to create a new salad every workday. This resulted in "Salad Love", a collection of lunch salads. Now he has created salads for breakfasts. In essence, these are one bowl meals, mainly sweet but also savoury in some cases. His main criteria are: to be quick and easy to prepare, to give energy for the day, to be filling, and to be healthy. There are 150 here, clearly marked vegetarian, vegan, raw, omnivore or pescatarian. And they can be adapted to fit different diets. The basic layering for each bowl includes two fruits or veggies, a cereal, a protein, a liquid, and a one teaspoon garnish. There are 100 pages on sweets and 50 pages on savouries.  Preparations have their ingredients listed in both metric and avoirdupois measurements, but there is no table of equivalents.
Audience and level of use: beginners, breakfast lovers, rushed people.
Some interesting or unusual recipes/facts: blood orange, avocado, brown rice and shrimp; lychee, pineapple, oats and walnuts; blackberries, melon, oats and chia seeds; pomegranate, grapes, quinoa and coconut yogurt.
The downside to this book: I actually wanted more preps.
The upside to this book: well-illustrated with one pix per bowl.

7.SOUTHERN HEIRLOOM COOKING (Good Books, 2016,349 pages, ISBN 978-1-68099-131-4, $24.99 USD hardbound) is by Norma Jean McQueen Haydel and Horace McQueen. Norma Jean cooked her family preps but never measured or wrote things down. Her brother Horace decided that she should, and together they produced this "family" collection of 200 recipes. The food is traditional and straight forward, and the preps are arranged by type such as apps, snacks, salads, soups, sides, mains, breads, desserts, and preserves. It's a great name for a cookbook, with the word light referring to the daytime and to the filling nature of the food. Bajada has tried to lighten up traditional foods from Denmark, Sweden, Finland, Iceland and Norway, incorporating foods from abroad. Most of the work is vegetarian, with a handful of meat dishes such as milk-poached chicken or rhubarb-braised pork. It all begins with a Nordic brunch, followed by mid-morning snacks, lunch plates, fika [tea time], bowls, family-style, weekend entertaining, and late night foods and drinks. The first 100 pages deals with "from the dairy", and covers the basics of milk, butter, and yoghurt. And then it is on to cheeses, with fresh cheese, surface-ripened, blues, semi-hards, and cooked curd cheeses. Along the way there are recipes, interviews with other cheesemakers, photos, and single-page stories. There are also resources pages and a bibliography for further reading. 13.BREW (Quadrille Publishing, 2016, 256 pages, ISBN 978-1-84949-727-5, $24.95 USD hardbound) is by James Morton,  a UK author who has also written Brilliant Bread and How Baking Works. As he says, "This book is for those who have never considered brewing and want to understand a bit more about beer". And it is also for those who want to move on from kits and explore other possibilities. He starts off with kits, which are eminently satisfactory for most people who like to have a good beer without going too deep into tasting notes and definitive answers. It's much like driving a car: you can be a regular driver or you can advance to racing – you just need new vehicles. So he starts with the basics, which applies to everyone: what brewing is, sterilizing, principles of fermentation, different forms of equipment, different types of hops and grains, troubleshooting. Then he moves on to the major categories for kits or doing it yourself – British/Irish ales; American beers; European beers; beer specialties and sours. It's really easy – I did it for a few years until I started putting on weight. Now I just drink the occasional draught beer. As brewing is related to baking (yeast, exactitude), everything is scaled.

Here she concentrates on canning, curing, infusing, and bottling Italian flavours and traditions, both sweet and savoury. And it comes with log rollers including Nancy Harmon Jenkins. After some details on safety, water-bath canning, and pressure canning, she has arranged her material by form: foods preserved in oil, in vinegar, sweets, tomatoes and tomato sauces, infused oils/vinegars, fresh cheeses and cured meats, syrups and fruits preserved in alcohol, ending with confections.  She also includes a wide-ranging list of sources and a bibliography. It is a great package, covering different regions of Italy.  She's also got some nice tips and backstories for each recipe. As well, there is a large typeface and good use of white space.
