The Quote/Background: This showcase was last presented in Toronto in 2015. It will be a biannual affair. BTW, this was one of the very few wine shows I have attended that let me choose my own wines to sample and in my own order. Thanks!!

The Food: the deep and dark espresso coffee came from Barocco Coffee Company; the sparkling and still water came directly from the Dolomites via Dolomia water; Speducci Mercatto and Paganelli co-ordinated the sopressata and salumni and wild board coppa, as well as the local prosciutto; and Cibo provided a penne borghese pasta dish. Breads were also included.

The Downside: it was blazing hot outside, with a slow walk from Dufferin Gates to Liberty Grand.

The Upside: a chance to re-discover the many wines and principals of Profile.
