  The Availability/Catalogue: almost all the wines we tasted were available   from Cottonwood Agency.
  The Quote/Background: Paolo Bortoloni makes the wines for Le Cimate, and he   was along to speak about the wines in context with the company's philosophy. The   family owns a total of 170 hectares, with 108 used for grain, 15 for DOP olive   groves (9,000 trees), and 20 for DOCG vines. There are four different types of   grapes: sagrantino, sangiovese, trebbiano spoletino, refosco.

  The Food: platters of Italian appetizers: puff paste, mainly spinach and   cheese, anchovy, tomato, deep fried olives.
  The Downside: I arrived late due to TTC issues.
  The Upside: A chance to try the Montefalco Sagrantino vertical of 2011,   2012, and 2013.
